HEIF, HEIC and JPG, measured
HEIF and HEIC are not two rival formats, which is the confusion worth clearing up first. HEIF is the container; HEIC is that container holding image data compressed with HEVC, which is what an iPhone writes. A .heif file is usually the same thing under a more general extension. Either way, converting to JPG costs you size and buys you compatibility.

HEIF encoded via macOS sips at quality 80, JPG via mozjpeg at quality 90, the settings at which both scored the same structural similarity against the master. Measured on one 3840 x 2160 (8.3 MP) photograph, decoded once and then encoded into each format from that same master, so neither format inherits the other's compression artifacts. Your own files will land on different numbers; the direction and rough scale of the gap is what carries over.
Questions
What is the difference between HEIF and HEIC?
HEIF is the container standard. HEIC is Apple's name for HEIF holding HEVC-encoded images. Every HEIC is a HEIF, so both extensions convert identically here.
Why does my camera write HEIF instead of JPG?
HEIF holds roughly the same visible quality in about half the bytes, and supports 10-bit colour depth that JPG cannot represent.
Will I lose the 10-bit colour?
Yes. JPG is 8-bit only, so a 10-bit HEIF is reduced during conversion. On ordinary photos this is not visible, but it matters for heavy grading work.
Is my photo stored anywhere?
No. HEIF decoding needs the server, so the file is uploaded over HTTPS, converted in memory, and discarded. Nothing is written to disk.
